“Riesling is not the only wine that goes with spicy food. My other go-tos are fruit-forward wines like Chenin Blanc and Gewürztraminer.”
Why He Won Because, after running the best Riesling-based wine program in the country (at Vegas’s Lotus of Siam), he has created a sensational list at his new Thai restaurant, Chada, where he is both sommelier and chef.
At this tiny small-plates spot in Vegas's Chinatown, a ten-minute drive from the Strip, you can try fried pig's ears, garlicky Cornish game hens, and brothy noodles. Wine is a big deal here. And once you sip an off-dry Riesling between bites of rice noodles and sweet-and spicy crab, you'll taste why this is one of the best food and wine pairings of all time.
I had ordered the Salmon with Tom Yum. Salmon being something I've never liked or enjoyed and your restaurant changed that for me. The Kua Kling was insanely delicious and so well prepared.

Just finished an amazing meal here. I had the lettuce wraps with crab and a pork mint dish that Bank recommend. Paired this with a roulet bourg blanc 2010. How could you go wrong?
